Traditional Indian Attars: Mitti, Shamama, Ruh Khus and the Kannauj Method

In Kannauj, in the weeks before the monsoon, distillers bake discs of local clay in small kilns and then distil them – the earth itself – into sandalwood oil. The result is mitti attar: the smell of the first rain on dry ground, captured months in advance and sold in a bottle.

There is nothing else quite like it in world perfumery, and it is only one of a dozen or so classical Indian attars, most of which are poorly understood outside the towns that make them. This guide sets out what each of the traditional attars actually is, how the deg and bhapka method produces them, and why sandalwood – not the flower on the label – usually decides what one costs.

What makes an attar an attar

An attar – itra or ittar, from the Arabic itr – is a concentrated fragrance oil made by distilling a botanical directly into a base oil, traditionally sandalwood. Three things separate it from perfume as most people understand it.

  • It contains no alcohol. The fragrance sits in oil, not in ethanol. It is applied in tiny quantities to pulse points rather than sprayed, which is why a few millilitres last months.
  • The base is part of the product, not a dilutant. In conventional perfumery the alcohol evaporates and disappears. In an attar the sandalwood stays on the skin, contributing its own creamy, persistent character to everything distilled into it.
  • It is captured, not blended. A true attar is produced by distilling the botanical into the receiving oil over hours or days, so the aromatic molecules are absorbed as they condense. It is a fundamentally different operation from mixing a finished essential oil into a carrier afterwards.

That last distinction matters commercially, because a great deal of what is sold as attar today is the second thing rather than the first. Both have their place. They are not the same product and should not cost the same.

How attar is made: the deg and bhapka method

The traditional process is a hydro-distillation carried out entirely in copper, and it has changed very little in four centuries. It is slow, fuel-hungry, almost impossible to automate, and still practised in Kannauj in Uttar Pradesh – the town whose perfume received a Geographical Indication in 2014, restricting the name to attar actually produced there by this method.

Vessel What it does
Deg The copper still. Flowers, herbs or baked clay are loaded with water, and the lid is sealed with a clay and cloth paste rather than a clamp.
Bhatti The clay furnace beneath it, fired with wood and dung cakes. Heat is judged by eye and adjusted by hand throughout the run.
Chonga A twine-wrapped bamboo pipe carrying the vapour from the deg to the receiver. It condenses as it travels.
Bhapka The copper receiver, charged with sandalwood oil and submerged in a water tank for cooling. The vapour condenses into the oil, which absorbs the aromatic molecules directly.
Kuppi A leather flask the finished attar rests in. The hide is porous to water but not to oil, so residual moisture escapes over weeks while the attar itself stays put.

A single attar commonly takes several successive rounds – the same charge of sandalwood oil is returned to the bhapka and run again with fresh botanical material, day after day, until it is saturated. Distillers judge readiness by smell and by the weight of the receiver, not by instrument.

Then it rests. The traditional wisdom that an attar improves for years in the kuppi is the same principle that governs industrial fragrance production, where maceration and maturation are what turn a freshly blended composition into a settled one. The vocabulary differs. The chemistry does not.

Sandalwood is the hidden economics of the entire category. Every true attar is distilled into it, which means the price of an attar tracks the price of sandalwood far more closely than it tracks the flower named on the bottle. When sandalwood became scarce and expensive, a great deal of the market quietly moved to liquid paraffin or dilute carrier oils as a base. That single substitution explains most of the price gap between attars that look identical on a shelf.

The classical attars, one by one

Mitti attar

The most distinctive thing India has given perfumery. Discs of local alluvial clay are shaped by hand and half-baked in a kiln, then loaded into the deg and distilled into sandalwood oil. What comes across is petrichor – the specific smell of rain landing on parched earth – along with wet mineral, warm dust and a faint smokiness from the baking.

It is worn through the hot months in northern India, and it is one of very few fragrance materials in the world made from a non-botanical, non-animal source. There is no synthetic that reproduces it convincingly, which is why it remains a genuinely uncopyable Indian product.

Ruh khus

Pure vetiver oil, distilled from the roots of khus grass with no sandalwood base at all – hence ruh, meaning spirit or pure essence. Deep, damp, rooty and profoundly cooling, it is the classical Indian summer material, historically used in everything from screens hung in doorways to sherbet.

Traditionally distilled and stored in copper, which is generally credited with the characteristic green cast of the finest examples. Vetiver is also one of the great fixatives in modern perfumery, and appears in our naturals portfolio for exactly that reason.

Ruh gulab and rose attar

Two related but different things, and the distinction is worth knowing. Ruh gulab is pure rose oil, distilled without a base. Gulab attar is rose distilled into sandalwood, which softens the rose and extends it enormously. Both are made from the Indian damask varieties grown around Kannauj, Hathras and Aligarh, harvested before sunrise because the oil content falls as the day warms.

Kewra

Distilled from the male flower spikes of the screwpine, Pandanus odorifer, grown along the Odisha coast. Sweet, honeyed and faintly rubbery in the best way – unmistakably South Asian, and used in cooking as readily as in fragrance. It is one of the materials most people from the subcontinent recognise instantly without ever having been told its name.

Motia, bela and chameli

The jasmine family, and a source of endless confusion because the common names shift between regions. Broadly, motia and bela refer to Jasminum sambac – the round, intense, slightly green-fruity jasmine – while chameli usually means Jasminum grandiflorum, softer and more narcotic. Both are picked at night, when the flowers open and the oil yield peaks.

Shamama attar

The most complex thing in the Indian repertoire, and the hardest to make. Shamama is a compound attar built from a long list of herbs, roots, spices and woods – typically including nagarmotha, valerian, kapoor kachri, saffron, clove, cardamom and vetiver – distilled in sequence into a sandalwood base over an extended period, then aged, sometimes for years.

Every house has its own recipe and most treat it as confidential. The result is warm, dark, resinous and spicy, worn in winter, and it remains genuinely popular across the Gulf. Shamama-tul-amber is the richer variant with amber character added.

Hina attar

Closely related to shamama and often confused with it. Hina is built around the blossom of the henna plant, Lawsonia inermis, together with herbs, spices and sandalwood. Warm, sweet-woody and slightly medicinal in the way good herbal compositions often are. Another winter attar, and another where the recipe varies by maker.

Majmua attar

The word means a collection or assembly, and that is precisely what it is – a compound attar built by blending several finished attars and oils, commonly including hina, kewra, sandalwood and vetiver. Balanced rather than dramatic, which is why it travels well and remains one of the most widely exported Indian attars.

Meetha attar

Literally “sweet attar”. Not a single fixed formula but a family of warm, sweet, ambery compositions with saffron and spice character, differing considerably between houses. If two meetha attars from different makers smell nothing alike, neither is wrong.

Kasturi attar, and an honest word about musk

Kasturi means musk, and historically it meant deer musk – the glandular secretion of the male musk deer, which was among the most prized materials in perfumery for centuries.

It cannot be used today, and this should be stated plainly because a great deal of marketing around the word is misleading. The musk deer is listed under Schedule I of India’s Wildlife (Protection) Act 1972, and international trade in Moschus species is prohibited under CITES Appendix I. Anything sold openly in India as genuine deer musk is illegal, misrepresented, or both.

What legitimate kasturi attar is made from instead is either ambrette – the seed of Abelmoschus moschatus, known in India as mushkdana or kasturi bhendi, which contains naturally musky macrocyclic compounds – or from synthetic musks, which are safe, stable, and far better understood toxicologically than the animal material ever was. Neither is a compromise. Ambrette in particular is a beautiful material in its own right.

Oudh attar

Agarwood distilled into sandalwood, sitting at the meeting point of the Indian attar tradition and the Gulf oud tradition. Where a pure dehn al oud is undiluted agarwood oil, an oudh attar is softer, rounder and considerably more wearable for anyone new to the material. It is the natural bridge between this guide and the Middle Eastern fragrance category.

Warm and cool: why attars are worn by season

Classical Indian practice divides attars by their effect on the wearer, not by gender or occasion. It is a genuinely useful framework and it survives in how these products still sell today.

This is not folklore dressed up as fact. Warm, resinous materials genuinely project harder in heat, and light green-watery notes genuinely read as cooler. The tradition encodes real olfactory behaviour, which is why it maps so neatly onto how modern brands plan seasonal launches.

Ruh, attar and itra: what the words mean

Three words used interchangeably in the market and precisely by people who make them.

  • Ruh – a pure distilled essence with no base oil. Ruh khus, ruh gulab. The material and nothing else.
  • Attar – a botanical distilled into a base oil, classically sandalwood. The base is integral to the product.
  • Itra or ittar – the same word as attar, differently transliterated. In current retail use it has broadened to mean almost any alcohol-free fragrance oil, including blended ones that were never distilled at all.

If a supplier cannot tell you which of the three they are selling, that is itself the answer.

Attar in modern fragrance manufacturing

Traditional distillation is not a museum piece, and the reason is commercial rather than sentimental. Oil-based, alcohol-free fragrance is one of the fastest-growing formats in global perfumery – driven by Gulf demand, by halal-conscious markets, and by consumers who want longevity from a small, portable, low-spill format. Attar is that format, and India has been making it for four hundred years.

What changes at commercial scale is everything around the distillation:

  • Reproducibility. A traditional distiller judges by nose and memory. A brand ordering repeat batches needs the tenth run to match the first, which requires reference standards, analytical verification and documented process control.
  • Sandalwood security. The base is the largest single input cost and the most volatile. Without owned or contracted supply, an attar programme is exposed to a market that has historically moved violently.
  • Compliance. Oil-based concentrates applied directly to skin sit under IFRA restrictions like any other fragrance, and export markets each add their own documentation requirements.

Sawai began in Kannauj in 1965 with a single hydro-distillation unit, and the company that grew out of it now runs the whole chain: around 2,000 acres of owned sandalwood plantation, owned fields and dedicated farmer networks for rose, kewra, jasmine sambac and grandiflorum, tuberose, champaca, vetiver and agarwood, in-house distillation and extraction, and perfumers who have worked with these materials for three generations.

That combination is unusual for a specific and unglamorous reason. Sandalwood is the base of every true attar, it is the most expensive thing in the bottle, and owning it at plantation scale is what makes consistent, repeatable attar production possible at volume rather than at artisan quantities. Oriental attars, mukhallats and bakhoor are produced in bulk on that basis, as private-label or white-label programmes for brands entering the category.

What is the difference between attar and perfume?

Perfume is fragrance concentrate dissolved in alcohol, sprayed, and typically 5–20% concentrate. An attar is a botanical distilled directly into a base oil, usually sandalwood, with no alcohol at all, and is applied in drops to pulse points. Attar is far more concentrated, wears much longer, and develops differently on skin because the sandalwood base stays put instead of evaporating away.

What is mitti attar made of?

Note that some products marketed as attar are simply fragrance oils blended into a carrier rather than distilled – also alcohol-free, but a different and cheaper product.

Is real kasturi or deer musk attar legal in India?

No. The musk deer is protected under Schedule I of the Wildlife (Protection) Act 1972, and international trade in Moschus species is banned under CITES Appendix I. Any product sold as genuine deer musk is illegal or misrepresented. Why is sandalwood used as the base for attar?

Three reasons. It is close to odour-neutral in the sense that it does not fight what is distilled into it; it is an exceptional fixative, holding volatile floral molecules on skin for hours longer than they would otherwise last; and it is stable enough not to go rancid the way most fixed oils would. It is also the single largest cost in the bottle, which is why sandalwood price, not flower price, usually determines what an attar sells for.

Does attar expire?

Unlike alcohol-based perfume, good attar generally improves with age. The traditional practice of resting it in a leather kuppi exists to drive off residual moisture, and well-made attars are commonly aged for months or years before sale, with shamama sometimes held far longer. Stored away from light and heat in a sealed bottle, attar keeps for a very long time. Attars made on paraffin or dilute carrier bases rather than sandalwood do not behave this way.
